Potatoes:

-Bring a pot of water to a boil.
-Add 1 or more pounds of purple or other colored potatoes, simmer until soft.
-Drain the potatoes and cool.
-Once the potatoes can be handled, slice them into ½ inch rounds and set aside.
-Using a sauté pan bring canola oil or butter up to a hot temperature, add the potatoes and sear on one side.
-Flip the potatoes in the pan, you may need to add more oil or butter to the pan.
-Season the potatoes with salt and pepper.  

Chimichuri

-1.5 Cups equal parts Parsley, Cilantro and Basil minced
-2 Tbsp Garlic minced
-2 Tbsp Shallot minced
-2 Lemons, zested and juiced
-3/4 Cup EVOO
-1 Tsp Salt
-Mix together in mixing bowl

Tomato Aioli

-1.5 cups Mayo
-1 cup house dried roma tomatoes
-1/2 tsp salt
-Blend
