Exclusive Look Inside Canal Park Brewery

DULUTH - Crews are putting the finishing touches on Duluth’s newest brewpub. But before it opens in just weeks, FOX 21 got an exclusive look into the state-of-the-art brewery in Canal Park.
"First we want them to say, wow," Canal Park Brewing Company assistant general manager Pepin Young said.
The Canal Park Brewing Company is adding some flavor to one of Duluth’s premier spots.
"Come on in for great conversation,” Canal Park Brewing Company General Manager Tom Eugenis said. “Obviously a great view and just come and learn."
The nearly 8,000 square foot facility has a pier flair.
"It looks like it's been here for 100 years and it will be here for 100 years," said Eugenis.
It’s serving up North Coast style craft beer.
"We want people to feel comfortable here, feel welcomed,” said Young. “We want them to feel that they're getting great service, great beer, excellent food."
Inside the brew house is where all the magic happens.
"Our biggest asset that we have here is Lake Superior water, it's phenomenal for brewing," Canal Park Brewing Company Brewer Badger Colish said.
They're brewing up batches in fermentation vessels operated with an automated system.
"It gives you a visualization of the path that you're moving things and a display to show if the pump or valves or motors are on or off," said Colish.
The brewery can produce 100 different types of beers with 8 on tap at any given moment.
"What I've tried to do is brew beers that have a wide appeal across a wide range of tastes," said Colish."Sweet, spicy floral, bitter and beer, what people call beer."
The brewery also features a retail shop with locally made goods.
"We wanna drive our local environment, local economy and to do that we have to support each other," said Young.
They also sell a cooler full of growlers, so you can sip their ales at home.
"Any adventure, anywhere, anytime that's the growler idea," said Young.
It’s another brewery helping to put Duluth on the map as a destination for craft brewing.
Officials say they are hoping to open the brewery mid November 2012.
