DULUTH, Minn. -

The largest crop ever produced by University of Minnesota Duluth’s Sustainable Agriculture project is being harvested.

An estimated 30 tons of cucumbers, tomatoes, peppers and other vegetables will be harvested this year.

The produce is all organic and is sold to UMD’s dining services to promote healthy eating and sustainable living.

The produce this year will be around a 1,400 percent increase from 2011.
