In this week’s Cooking Connection, we make cucumber and melon chutney with Whole Foods Co-op.

This is made with melons that are in-season. It can be used as a bruschetta, or on fish.

Cucumber and Melon Chutney

-1.5 cups of seeded and diced Honeydew

-1.5 cups of seeded and diced cucumber 

-1 small jalapeno seeded and diced 

-2 tbsp. diced red onion

-2 tbsp. minced cilantro

-2 tbsp. fresh mint 

-Optional tbsp. curry powder

-Juice of one lime

-Salt to taste
