Cooking Connection: Scallops w/ Shrimp Sauce

For this week’s Cooking Connection William Seay cooks with Duluth East students. 

A program called “Food For Thought Restaurant” gives students the chance to learn about the food service industry.

There are three classes: Introduction to Foods, Classical Line Cooking, and Classical Cooking.

There is also a waiter/waitress program.

If you’re interested in trying it out, Food For Thought Restaurant only accepts reservations 24 hours before your visit, because your order becomes the lesson plan for the next day.

Sauteed Scallops with Shrimp Sauce:

Scallops:

-Dust scallops with flour and seasonings

-Cook scallops for about 6-7 minutes

-transfer scallops to oven

-Once cooked, place on croissant and cover in shrimp sauce

Shrimp Sauce:

-saute shrimp shells

-Add stock to it, drain sauce

-Add cream and stir
