Making Seared Ahi Tuna with Essentia Health
Cooking Connection: Seared Ahi Tuna
For this week’s Cooking Connection we made Seared Ahi Tuna with Chad Nurminen. He is the executive chef with Essentia Health St. Mary’s Medical Center.
Seared Tuna
Sesame seeds, black and white
Tuna 4 pieces (5-6 oz)
Coleslaw 4 cups
Shredded Carrot .5 cup
Green Onion, sliced thin 1/4 cup
Asian Dressing
Soy Sauce 1/4 cup
Lemon Juice 1/4 cup
Blended oil 1/4 cup
Fresh Ginger 1 tbsp
White Vinegar 2 tbsp
Brown Sugar 2tbsp
Sesame oil 1 tbsp
Sesame seeds, black and white 1 tbsp
Sriacha 1tbsp
Soba Noodles
Cook and cool noodles per directions on package
Add 2 Tbsp of Peanut Butter to the above Asian Dressing recipe to make a spicy peanut dressing
Dress the Soba noodles in the spicy peanut dressing
Season tuna with salt and pepper and roll in Black and White sesame seeds
Sear on Grill or pan until Medium (140 degrees)
For the Dressing
Combine all ingredients and mix with immersion blender.
Add to slaw, onions & carrots.
