Cooking Connection: Eggplant Parmesan

For this week’s Cooking Connection we made Eggplant Parmesan with Anthony Sclavi, owner of Sclavi’s Italian Restaurant & Bar.

Sclavi’s Italian Restaurant and Bar is located at 1106 Tower Ave, Superior, WI 54880.

They are open Thursdays, Fridays and Saturdays from 4-10 p.m.

Eggplant Parmesan

-Thinly slice eggplant and soak in water

-Put olive oil in pan on high heat

-Take eggplant from water and dip in flour mixture, place in pan

-Let eggplant simmer in pan under it has a golden crust, flip

-Top eggplant with mixture of low-moisture mozzarella cheese and shredded aged Parmesan cheese

-Let cheese melt, cover with tomato sauce

-Top with fresh basil
