For this week’s Cooking Connection we paired up with Duluth native Matthew Francis.

We made a traditional Greek Salad with Matthew.


-Chop Oregano
-1 Tbs. Dijon Mustard
-1 Tbs. Honey
-1/2 cup Olive Oil
-Squeeze one lemon
-Add Apple Cider Vinegar
-Add splash of juice from calamata olives and capers
-Add minced garlic
-Add pepper and salt


-Chopped red onion
-Chopped Roma Tomato
-Chopped Cucumber
-Crumbled Feta Cheese


-Mix two parts cucumber, one part tomato, one part red onion
-Combine with dressing
-Add Feta Cheese, calamata olives and capers as you desire
