Preparing Panzanella Salad for Hot Summer Days

DULUTH, Minn. – In this week’s Cooking Connection, FOX 21’s Victoria Main shared with the crew her favorite recipe for a cold Italian Panzanella Salad.

Main says the dish is perfect for hot summer nights, when cooking warm foods just simply isn’t an option.

This dish can be spiced up or made simple. The list of ingredients below may seem slim, but the overall taste is out of this world.

Victoria’s Panzanella Recipe:

One loaf cut into bite sized cubes:
– Focaccia
– Ciabatta
– French Baguette
(or any fairly dense bread that can stand up to Olive Oil & Vinegar of choice)

1-2 pints cherry tomatoes (Depends on how much bread you’re using.)
1 small jar roasted red peppers (Amount suited to taste)
1 small jar of capers (Amount suited to taste)
Fresh basil chopped or torn into small pieces
Grated Parmesan

Dress with Olive Oil (enough to coat bread) and
Vinegar of choice (Balsamic or Red Wine vinegar work well)

Often added:
Kalamata Olives
Red Onions
