Brats, polish, sausage, salami and pepperoni are all a part of upcoming summer festivities.
In this week’s Knowing Your Neighbors, Fox 21’s Avery Neuville takes to a unique business in Ashland that can help provide all your grilling needs.
The master behind it all, Victor Trinko, started the famous business back in the 40’s as a grocery store and sausage shop.
After generations down the line, Diana Hersch and Darlene Sackmann are now the owners of Trinko’s Sausage.
“It’s like cigarettes. You gotta have it!” said Sackmann.
A lot of their regulars call it the best meat they’ve ever had.
“We’re processing from 1,000-2,000 pounds of meat a week,” said Hersch.
So, it should be no surprise what people seem to like the most.

“It’s a spicy sausage. It’s been around for anywhere from 60-70 years,” said Sackmann.
They also have pepperoni, salami, beef jerky and more.
“The flavors are good and they are unique to themselves,” said Hersch.
So, what’s the secret to these unique flavors?
Simplicity.
“We aren’t trying to copy or be someone else. We are who we are.”
Some of their customers have traveled all over the world and still have not found another place that comes close.
“We’ve had guys come in from Iraq saying, “My mom sent me this. It’s the best stuff ever.”
Diana and Darlene say these are the memories that make all the hard work worth it.
“The good days outweigh the poor,” said Sackmann.
Especially at the end of the week.
“When you’re sitting here Friday at 2:00 and you’ve sold everything for the entire week it’s like “Okay, we are doing a good job.”
Trinko’s is open Tuesday through Friday, 9 a.m. to 5 p.m.
