Texas Roadhouse butchers from across the Midwest are gearing up for the National Meat Cutting Challenge in La Crosse next week.

The competition is the only one of its kind in the nation and hopes to restore the lost art of meat cutting.

Butchers have one hour and 20-minutes to cut 40-pounds of beef.

The winner will cut the most steaks with the highest quality cut, in the least amount of time.

Every steak has to be so many inches across, long, you’re allowed so much fat, no silver skin, getting rid of all the stuff the guests wouldn’t want to eat,” said Texas Roadhouse Meat Cutter Dan Willeck.

The winner will compete again in March, for a chance to win $20,000-dollars.
