Knowing Your Neighbor: Yes, Cheese
SUPERIOR, Wis. — If you are feeling bleu, but want to feel cheddar, a gouda idea would be to head over to Yes, Cheese in Superior and they will have you feeling sharp again in no time.
Kimber Johnson grew up on a dairy farm and is well acquainted with what cheeses the various creameries in Wisconsin have to offer. Being the curd nerd that she is, she wanted to bring some of those delicious flavors to the Twin Ports.
“We really wanted to find a way to incorporate all of that great local cheese into something here that we can share with our neighbors and our friends and family. And we actually saw someone else on the internet doing charcuterie and we’re like, well that’s really cool. And so we started diving in and now we’re Yes, Cheese,” said Johnson.
When making charcuterie boards, most of their cheeses comes from Wisconsin. They also source from two creameries in Minnesota and one in South Dakota.
“We actually bring in enough cheese so you can just come in and buy cheese from us as well, so we’re a cheese house now too,” said Johnson.
In addition to the cheese, they try to locally source other products used in some of their creations as well.
“We try to incorporate as many local products as we can. So, Burgess Maple Syrup, we use their maple syrup directly in our pan fried curds. We partner with Topside Bloody Mary because we do also make a Bloody Mary box. It’s just really nice to support as many other local makers as possible,” said Johnson.
While it’s not a surprise that cheddar is the most popular, some people come in and ask for the funkiest, vile smelling cheese. So what is the funkiest that you can find at Yes, Cheese?
“It’s usually like, gonna be like a bleu cheese style or something. We just brought in some Alemar Cheese, which is a Minnesota producer, and they definitely have some funk smells,” said Johnson.
You can order their charcuterie platters, boxes, or cups online where catering is also an option. But, a feta idea would be to check them out in person at their location next to the Spirit Room in Superior on Broadway Street. Check their website or Facebook page for store hours.
