Tom’s Taste of Chicago Rolls into New Place in Duluth

DULUTH, Minn. — A familiar food name on wheels has now found a home with permanent walls and a roof.

The Tom’s Taste of Chicago food truck will soon expand into a brick-and-mortar building. It will take over the former VIP Pizza building in West Duluth. The truck’s namesake, Tom Nicholl, says he’s keeping his wheel operation running strong, but the building was what he’d long been looking for. He will offer what they call authentic Chicago–which includes Maxwell Street Polish and meatball subs. But now he’s teaming up with pizza guy Dave. A marriage made in kitchen heaven.

“A big part of the fast food in Chicago is pizza. And when Dave and I got together and talked about it, it’s just a win-win. He does the pizza thing, and we do the whole Chicago fast-food, Italian beefs and hot dogs. it’s just a perfect fit,” said Tom Nicholl, owner.

The team prides itself on fresh ingredients including fresh bread. Dave Sowers said the pizza will be equally authentic and is not to be confused with whatever else you may think Chicago style means.

“We are looking at a fresh crust, hand-tossed, thin crust of course, Chicago style. We are looking more towards a sausage based. You don’t find a lot of pepperoni down in Chicago. As Tom stated, you don’t find the deep-dish, the casserole. That’s not something that’s there,” said Sowers.

Dave and Tom say they are still waiting for some final items for the operation, but they hope to be ready to open their doors by May 1st.
