‘Uffda Kombucha’ Restaurant, Taproom Coming To Superior

SUPERIOR, Wis.– The duo who run Uffda Kombucha are developing a new brewery at the former location of Shorty’s and Bucktales on Tower Avenue in Superior.

More specifically, the owners of Uffda Kombucha have decided they needed to expand because of their growing success.

To accomplish this, the vacant building came up for sale, and after two years of searching, they decided to go for it.

To add a unique spin, Uffda Kombucha’s owner decided to rope in his brother who has experience in restaurants such as Lake Avenue.

The finished project will include a hybrid taproom and restaurant to showcase the talents of each brother.

But for now, the project is in the early stages of renovation.

“It’s a lot right now, it’s overwhelming. But then there’s this huge sense of relief of we’re going to be able to produce what we need to. So, we can maybe get ahead a little bit. Come up with, we have a lot of ideas and a lot of exciting things we want to try but we haven’t had the time to do it. Because our current production capacity really limits us. So, moving here, we will have ten times the production capacity,” explained Colin Zervas, co-owner of Uffda Kombucha.

For reference, right now Uffda is operating in a space that’s only 800 square feet.  And now, they’re upgrading to a roomier 7,000 square-foot building. And with that extra space, it’s bringing in even more opportunities.

“You know, really just bringing the flair of excitement to organic food, because kombucha is such an organic product that they make. So, to kind of bring that whole flair to the dishes is going to be the key component to this space. Bringing a lot of greenery to this space, just a lot lighter. That’s going to be kind of the vision for the dishes,” said Jeffry Zervas, the soon to be chef at the establishment.

With everything still very early on, the timeline for an opening date is still up in the air.

But right now, they’re aiming to begin brewing kombucha in early May, and possibly opening up shop in June.
