Johnny B’s Braves the Cold
DULUTH, Minn. — One local food truck is braving the cold and sharing their love for their craft.
Food trucks are usually seen as a staple of summer cuisine
but Johnny B’s is determined to serve up savory meals year-round.
“They’ve been here almost every Thursday, all throughout the winter and we appreciate that as employees of cirrus,
because having some good food other than just something from the breakroom or something simple that you bring home,
really like helps make that end of the week better after a long week at work.” – Mikal Grotte, Technician in Finishing Center at Cirrus
The food truck can often be found parked outside Duluth area businesses like Cirrus and Bent Paddle; area’s people are working or gathering, letting customers be more comfortable while still getting delicious meals
“In the truck it’s not as cold. I’ve got the heat going and everything. So, my thought is about the customer. I have online ordering available; that’s a big piece to my winter operation. People can place their orders inside and then they get a text message or an email that says that the food is ready for them. Then they have to come out and have to bear with some cold but not as much as you’d expect” – Johnny Barnstorf, Owner Johnny B’s Food Truck
The passion that drives Johnny Barnstorf to keep open during the winter also extends to his menu, with local, organic, and seasonal ingredients.
“I change my menu a lot, so there’s people that come up to the truck looking for some of those things that I have during the summer, I don’t have them. but then there’s also those things that I have during the winter that I don’t have during the summer. so, whenever you come to see the truck, you always be able to get something new as well as I always have my smash burger and that’s just a crowd pleaser.” shared Johnny.
Johnny cooks with intention as well, putting thought into how he warms the buns, creating a cheese skirt to add a tasty crunch to the smash burgers, to how the herbs and sauces best compliment the sweet and savory flavor profiles on the squash tarts.
“I wouldn’t be doing anything else, I guess if there was anything else I’d be doing I’d be on a beach somewhere. That’s not an option right now so I’m here cooking.” said Johnny.
