New Restaurant in Duluth Shares Noodle Recipe

DULUTH, Minn —

Sound Restaurant opened up in downtown Duluth, in the Old City Hall building, just about a month ago.

This week, chef Patrick Scot Moore lends his expertise to a very unique fusion dish – udon noodle carbonara.

Chef Patrick says it blends Roman cuisine with Asian, and the dish created an extremely unique experience on the palate!

Ingredients:

Udon noodles
Pork belly
Garlic-infused olive oil
1 large egg
Fresh parsley
Salt/pepper
Freshly grated parmesan cheese
Szechuan peppercorn

Pork belly is cubed and seasoned, and placed in a very hot pan on a stove with garlic oil.  Keep pork belly moving as it sizzles.

In a bowl, scramble egg, whisk together with fresh parsley, salt, pepper, and parmesan.

Udon noodles should be cooked to al dente, per packaging instructions (cooking ahead of time is recommended, for faster cooking times).

Add hot pork belly cubes to the egg mixture, allowing the heat from the pork to cook the sauce.

Add noodles to that mixture, and toss together, further cooking the sauce.

Plate in a sizable bowl, topping the dish with a dash more of the Szechuan peppercorn.

Garnish with shaved pepper and fresh herbs.
