For this week’s Cooking Connection Rich with Bent Spoon Bistro showed William Seay how to make a special sandwich.
Bent Spoon Bistro opened in May of 2014 and Rich said it’s been a good first year.
The restaurant is in an old diner and uses as much local ingredients as possible.
Bent Spoon Pesto
1 cup cashews
2/3 cup neutral oil (vegetable, canola..)
1 cup shredded parmesan cheese
1/2 cup shredded asigo cheese

1 cup fresh basil leaves
3 cups fresh baby spinach

Juice of one lemon
1/3 + extra virgin olive oil
Salt & fresh cracked black pepper to taste
Combine first 4 ingredients in food processor. Add the greens and pulse until just broken down. Then while mixing on low slowly drizzle in EVOO to emulsify. Lastly add the lemon juice and salt and pepper to taste. Can be used immediately but will taste better if left overnight for the flavors to mingle. Store in refrigerator use within a week. Recipe doubles well.
